Mmmmm! Mmmmm! GOOOOD!

If you like enchiladas you will love this recipe!

Enchilada Chicken

4 (4 oz)bonless, skinless chicken breasts
2 teaspoons salt-free Mexican or Southwest seasoning(I used Mrs. Dash Southwest Chipotle)
Olive oil spray
4 Tablespoons enchilada sauce (I used green chile enchilada sauce)
2 oz (2 cups) light cheddar cheese
2 Tablespoons finely chopped fresh cilantro

Preheat oven to 350*

Season each chicken breast evenly on all sides with the seasoning

Place a large ovenproof nonstick skillet over high heat. When hot, lightly mist with the olive oil spray and add the chicken. Cook, turning once, for 1 to 2 minutes per side, or just until the chicke is golden brown on the outsides.

Remove the pan from the heat and top each chicken breat with 1 tablespoon of the enchilada sauce, followed by one-fourth of the cheese and one fourth of the cilantro. Transfer the skillet to the oven and bake for 4-6 minutes, or until the chicken is no longer pink inside and the cheese is melted.


Serves 4

Seriously.. I agree with mom! I wish someone would cook like that for me! haha. Sounds soooooo good. I might have to try that.. especially since it seems like it might be something I could possible cook! haha

They probably won't know how lucky they are until they are all grown up and trying to care for themselves...and of course I will adopt you! We will have to have you over for dinner one night when I make this again!
