Another Quick One!!



We love this recipe. It is not only filling but the meat/ bean mix can be used in pita's, tortillas, or just over a bed of lettuce.

Turkey Taco Salad

1 lb ground turkey breast
2 Tbsp taco seasoning
2 Tbsp water
1 tomato-chopped
1 15 oz can kidney beans, rinsed and drained
1 15 oz can garbanzo beans, rinsed and drained
1 (2 1/2 oz) can sliced ripe olives, drained
1 small avocado-peeled and diced
1 c salsa
1/2 c reduced-fat sour cream
8 oz light tortilla chips
1 (10 oz)torn romaine lettuce
1/2 c preshredded reduce-fat 4 blend Mexican cheese

In large skillet brown turkey stirring until crumbled. Drain, if necessary, and return to pan. Stir in taco seasoning and water, cook for 1 min.

Add beans and olives to turkey mixture combine thoroughly.

In a separate bowl mix together the salsa and sour cream.

Serve over light tortilla chips with lettuce, tomatoes, avocados, salsa/sour cream mix, and cheese.

(One serving equals 3/4 cup turkey mixture, 6 tortilla chips, 1 cup lettuce, 1 Tablespoon cheese, 3 Tablespoon salsa and sour cream mixture.)

This too takes less than 20 mins start to finish! That's typically less then time it takes for you to get in your car, run to the nearest fast food restaurant, order, and sit down to eat. No more excuses not to have a good dinner.
